marinade for tonight’s chicken!
Ingredients:
  • 3 Boneless, Skinless Natural Chicken Breast
  • Leftover Sweet Dipping Sauce
  • 100% Natural Coconut Water
I have never used Coconut Water before, but when I saw it in the store, I thought it would be pretty interesting.  I took a swig of it, and I’m not too sure if I’d be able to drink it as is.  It might need to be mixed with some other juice, or water….more on that idea later.
Ready to marinate.
I put some of the Sweet Dipping Sauce on the bottom of my glass dish.  Then I placed my 3 Natural chicken breasts in the pan, then covered them with the dipping sauce.  I proceeded to pour some of the Natural coconut water over them.  That’s it, into the refrigerator they went for about 8 hours.  No reason on the 8 hours, I just happened to prepare this in the morning.
I baked up the chicken in a 350 degree preheated oven for 1 hour.  With dinner I had a tossed salad & the Cheesy Cauliflower dish I made earlier today along with a piece of Banana Bread.
Dinner
Verdict:  Hmmm  I have been a big chicken eater & preparer for many years now.  Always tossing around ingredients for a sauce.  The chicken tasted fine.  Nothing exciting, or mouthwatering in this simple recipe.  Maybe if I would have added more of the Sweet Dipping Sauce I would have been able to spruce up the flavor.  Not a do over as is, but worth playing with the ingredients in the future.  We’ll see what tomorrow’s lunch will be with the leftovers…..
