Cheesy Cauliflower
is much easier for me to grab a piece of fruit & eat it, rather than grabbing say a carrot stick. So, I thought I’d try my hand at making a dish with Organic Cauliflower.Ingredients:
- Head of Organic Cauliflower (cut & keep only the nice florets)
- 2 Organic Eggs
- 1/2C All Natural Queso Quesadilla Cheese, finely shredded
- 1/2C Homemade Local Bread Croutons
- 1TSP Sea Salt
- Organic Extra Virgin Olive Oil

I put the Organic Cauliflower florets in a pan of water & boiled. I am not sure how long they boiled for, but until they were soft enough to easily mush with my stirring spoon. Maybe 15 minutes or so.While that was boiling, I smashed up my bread croutons. I think I should have done this first, and used a 1/2C of smashed croutons to have more bread for my coating… 🙁

Strain the Organic Cauliflower & put in a bowl. Mash the cauliflower. I mashed with my spoon. Then I added the Organic Eggs, cheese, croutons & salt. Stirred up the mix. It looked a bit watery, so I tossed in the strainer.
Oil Up a skillet on medium/high heat with your EVO.

Mold into 3″ patties & place on hot skillet. This is where I wish I had more bread crumbs to hopefully help form my patties. They did not hold together at all! I cooked on each side for about 5 minutes or so. Just didn’t cut it.I then changed tactics to stir frying the rest of the mix up. That cooked up much better, sort of like you would think of as hash browns.
